After trying out the low carb muffin recipe I also wanted to try and substitute bread high on carbohydrates with low carb bread and found this recipe. The crust is slightly firm, the inside is relatively soft, a bit like wheat mixed bread. It actually tastes quite good, a bit like multi-grain bread, as I did use flax meal in it, but there's something that's irritating me and that is the chickpea flour. Uncooked chickpea flour just tastes horrid, well that's in my opinion, but as soon as it's fried, it turns into something absolutely delicious, e.g. in falafel or pakoras, yummy. Well maybe it's just in my head, but I don't think that the chickpea flour was properly converted during cooking and leaves a little bit of this bad after taste in your mouth. It's tolerable for the moment, but for my next bread I'll have to change this. Exchange the chickpea flour for soy flour again? Hm.It does not realy effect your insulin level, so if you don't feel like cooking in the evening, then you could easily eat this bread without going against the rules of Schlank im Schlaf, Atkins whatsoever...
